So, there are A LOT of things going on here today. First of all, so I bought Mary’s ebook about building a better healthy living blog, and it really is magical. It’s written so nice and concisely, and put into words so many of the things I wanted for MM but never knew where to get. Last night I was reading it, and even though it was TWO AM I wanted to run out to my computer and start implementing change, but C informed me that would be unacceptable. Sooooo I waited until this morning, and wow.
Second of all, today I have a guest post up at The Demoiselles that I am really really excited about. Not only do I love those girls over there and totally support the vision of their separate and combined blogging endeavors, I am feeling a little proud of it. My god, and THIRD of all, last night I participated in the fantastic #fitblog chat on twitter, conceived of and hosted by the fantastic Katy Widrick after this years’ FitBloggin’ conference (which I sadly was unable to attend). ANYWHO, last night there was a question about the weirdest/favorite/least favorite foods discovered on the healthy living journey. Now there were literally tons of people who were talking about Green Monsters (AKA Green smoothies around here), and I shared this recipe that I had posted oh so long ago as my fave go-to smoothie.
This caused me to think about my absolute, from-the-bottom-of-my-heart, love for kale and wanted to share with you yet another delicious and healthy recipe for you as it has come to my attention that people are generally afraid of kale. Are you afraid of kale?? It is seriously SO good for you, and the great bonus is, you don’t have to eat a ton of it to reap the benefits. Eating kale 2-3 servings a week will already set you on the road to success.
It should also be said that I learned of this delicious recipe from my genius little sister Jules, who made it for me, and introduced me to the healthful staple.
So. This is a recipe for RAW KALE SALAD:
- kale (way more than you think because this sure does “cook” down) – bonus if it’s organic

- lemon
- salt
- olive oil
- sesame oil
- rice wine vinegar
- pine nuts
- craisens
- feta
- red onion
So, this is more of an add things that you love to the basic outline of the salad recipe, but it is DELICIOUS and you would never know that it was raw because the kale is massaged. What’s that you say? THAT’S RIGHT FOLKS – its a spa for your kale, and subsequently your stomach.
- break up kale into little pieces, removing the thick stems. make sure that it’s clean!
- cut the lemon in half and squeeze over the bowl of chopped up kale
- sprinkle with salt
- begin to massage kale with your hands, squeezing it and pummeling it until starts breaking down and resembling steamed kale
- once kale is good and massaged, mix up the olive oil, sesame oil, and rice wine vinegar into a dressing to your liking. put on the kale and massage in a little more.
- add – feta, pine nuts, craisens, onion, and any other salad topping you like
Turn this salad into a full meal by adding some QUINOA.
I swear, don’t be afraid, this salad is going to rock your world.
